Sorry, I think the video is a hoax.
Temperature and time are two factors to get food done.
In this video, the time duration for shrimps to complete the whole journey appears less than two seconds, and the time duration for them to pass through the flame is only a fraction of a second, which is not enough to even heat up the shrimps, not to mention getting them cooked.
Besides, the flame comes from the bottom only, without rotating the shrimps quick enough, even if indeed the shrimps can be cooked under extremely high flame temperature in such a short time, how can they avoid being charred on one side and under cooked on the other side?
Therefore, it is quite doubtful when we see that these shrimps in plate appear so beautifully and evenly cooked.
